Is there a standard rule for how many decks are used in casinos? Example, there is a governing body for gambling in Las Vegas. This governing body will require that all casinos if it is multiple-deck blackjack must have at lest 5 decks in the shoe or 8 decks.

There is none as far as I know about the number of decks being used in land-based casinos.
For online casinos, I am thinking it is the same. It will differ from casino to casino. It will also differ on the type of blackjack game and the table rules you are playing on.
It is suggested that you find a table that best suits you. Read on the rules before playing. 1-deck blackjack with 6:5 payout is a bad choice. Best blackjack payout is 3:2. The 6 to 8 decks is also not a good choice. Many regular blackjack players say that 2-deck is the best. There are lots of this in Vegas. You only have to look for it.

Gotcha! Learned something from you McDermott! ;) Ya, based on experience, diff casinos have diff procedures/system/policies/what not..
By the way, I always love to play in a real casino rather than playing online, the intensity and adventure is really there! :)

In my experience, casinos will have anywhere from 1-8 decks for blackjack games.
